Undergraduate Programs of Study

Apparel and Merchandising

  • Concentrations: Apparel Design and Production and Merchandising.
  • Apparel Design & Production students acquire expertise in computer-aided design, production processes, and line development. Merchandising students focus on the inter¬national apparel industry, utilize multi-million dollar Lectra industry software, produce a fashion show, and benefit from industry internships.
  • Graduates find employment in design, product development, and quality assurance, and as assistant buyers, trend analysts, and visual merchandisers.

Construction Management

  • Construction Management provides a strong foundation for professional careers in the construction industry. Focus is on the integration of computer technology, innovative management systems, project management, and work experience internships.
  • The Construction Management program is one of the top ranked programs in the nation.

Family and Consumer Sciences

  • Concentrations: Family and Consumer Sciences and Family and Consumer Sciences Education.
  • Study the analysis, development, and implementation of policies and issues that support individual, family, and community well being.
  • The program’s course choices allow students to personalize their programs based on professional goals.
  • Students have the option of preparing to teach at the middle and high school levels or seek professional opportunities in business, government, or the non-profit sector.

Health and Exercise Science

  • Concentrations: Health Promotion and Sports Medicine.
  • Students receive a strong business and clinical background or they can pursue a strong science-based pre-professional curriculum.
  • Extensive practicum experience and a Human Performance/Clinical Research Laboratory provide hands-on research experience.
  • Career options include: corporate, hospital, military, cardiac rehabilitation, health clubs, and preparation for graduate/medical school for a future as a medical doctor, physical therapist, chiropractor, occupational therapist, and more.

Human Development and Family Studies

  • Students learn to identify factors that influence cognitive, emotional, social, and physical development from infancy through adulthood.
  • We place strong emphasis on internships, including child¬hood intervention programs, court, and correctional services.
  • Career options include: youth services organizations, early childhood education programs such as the Early Childhood Teacher Licensure Program, family and community services, and long-term care facilities. Graduates also pursue advanced degrees in areas such as marriage and family therapy.

Interior Design

  • Students gain professional expertise in technology, design, building codes, environmental issues, space use, govern¬ment regulations, and materials in commercial or residential interior design. The program is Foundation for Interior Design Education Research (FIDER) accredited, preparing students for multi-state employment.
  • Job opportunities include schematic design, space planning, field measurement and documentation, lighting design, construction document preparation, and specifications for furnishings and finishes.

Nutrition and Food Science

  • Students integrate the biological, medical, and social sciences and apply them towards improvement of human nutrition and fitness.
  • The dietetics program is ranked No. 5 in the nation by the latest Gorman Report.
  • A pre-med curriculum prepares students interested in attending medical, dental, graduate school, etc. Other career options include nutrition education, food product development, and food safety/quality assurance areas.

Restaurant and Resort Management

  • Ranked 22nd in a recent national report, this major integrates a business emphasis with coursework in nutrition and tourism.
  • A student-run restaurant, the Aspen Grille, provides hands-on learning of restaurant operation, food preparation, quality, business principles, and industry computer software.
  • Students are prepared for careers in the food service and resort industries including restaurants, hotel/resort food and beverage departments, schools, and health care facilities.

Social Work

  • Study social justice as it pertains to vulnerable populations, values/ethics, diversity, poverty, and social work practice skills. Accredited by the Council on Social Work Education (CSWE).
  • Practicum and class work focus on social work with individuals, families, groups, communities, and policy analysis learning mastery in such social work roles as broker, mediator, educator, counselor, researcher, and advocate. Students intern in such areas as child welfare, health, mental health, and gerontology.
  • Graduates obtain employment in health settings, corrections, hospice, long-term care, child protection, domestic violence, immigrant services, and more.
